Breakfast with a little fun..

Growing up, I always loved fresh potatoes fries and eggs, such a right combination, especially for breakfast, it leaves your mouth wanting more. Breakfast is my favorite meal of the day.

All you will need

6 small red potatoes

1 tsp of garlic

1 tsp of oregano

2 eggs

1 tsp of butter

3 tbsp of olive oil

few pinches of black ground pepper

Let’s get started

Start to cut up all the potatoes in the shape of a french fry and leave the skin on. Then once that is done soak them a small bowl of water with 1tsp of garlic, 1tsp of oregano, and add black pepper. Let them soak in the water for 20 minutes, but make sure they don’t get soggy.

Then start to pre-heat the pan and then add the olive oil once you see that the pan is hot.

Drain the water from where the potatoes and start put them in the hot pan, slowly until golden brown. You can add more garlic, oregano, and black pepper to give it more flavor. Once they are cooked, put the potatoes fries on a paper towel to soak up the oil.

Now the eggs:

Take the eggs break put them in a pre-heated pan with butter on low heat, cover them for just a few minutes until you see the top part turn white and don’t break the yolk.

Place the potatoes fries in a beautiful plate, then add the egg on the side.

ENJOY !!!! I sure did.

Breaded Pork Chops with Parmesan Cheese!!!

Let’s get Cooking with Maddy !!! This is a simple pork chop dish with parmesan cheese. You can enjoy it with rice on the side or fresh vegetables.


8 medium pork chops

3 eggs

1 cup parmesan cheese

4 cups of bread crumbs

1 tsp of garlic salt

1 tsp of Oregano

2 tsp of onion power

a few pinches of black ground pepper.

3 tbsp of olive oil

Now mix the garlic salt, onion power, oregano , parmesan cheese, black pepper, with the 4 cups of bread crumbs. ( Since we are making 8 pieces if you need more bread crumbs then add more if you need to) I like mine lightly breaded .

Take the 3 eggs and beat them well in a large bowl. while you completing your set up, take a nice large pan and put in the olive oil on med heat.

Now take the pork chop and dip into the egg, then dip it into the bread crumbs and then the pan. (if the flames are too high low it just a little) Cook them until they are light brown and make sure it’s cook inside by poking with a fork.

Once you cooked it as you like , get ready to start eating . ENJOY , I sure did and gained a couple of pounds.. 🙂 and it’s JUICY !!!

Love Stuffed Peppers….

Let’s do Stuffed Peppers !!!

  1. Family pack of ground turkey
  2. 8 medium peppers ( yellow, red and green).
  3. 1 Can Goya Black Beans
  4. 1 cup of cook Rice
  5. 2 Tbsp of olive oil
  6. 1 Tbsp of oregano
  7. 1 Tbsp of Garlic Salt
  8. Only a few pieces sliced Goya pimientos (naturally sweetened, roasted red peppers).
  9. 1 package of Sazon
  10. 1 package of Beef Bouillon
  11. 1 small onion
  12. 1 hand full of fresh Cilantro
  13. 3 Tbsp Goya Recaito ( Cooking base)
  14. 3 Tbsp Goya Sofrito (Cooking base)
  15. 1 Tbsp P of Minced garlic
  16. 1 can of Tomato paste
  17.  ½ can of Tomato Puree
  18. ½ of black pepper
  19. 1/2 chicken Stock

Let’s get cooking!!!! ..

First Pre-heat the oven to 350.

Place the turkey meat in a pan with 3 tbsp of olive oil on med heat stove while stirring,  put in the 1 tbsp of oregano, 1 tbsp of Garlic Salt, 1 package of Sazon, 1 small onion (chop in small pieces).   Then when it almost done, a  add a hand full of fresh cilantro, 3 tbsp of Recaito, 3 tbsp Sofrito, add 1 tbsp of minced garlic, 1 can of tomato paste, ½ of tomato Puree.  Mix well just to make sure all the ingredients  are in the meat. Add the black beans and cooked rice to the mixture and it should look like this.

I cooked it on the stove for 35 minutes but I made sure that my meat did not dry.

Then take all your 8 peppers , cut off the top and clean the inside and take out the seeds. Start to stuffing the mixture into the peppers , then add cheese, and Goya sliced pimientos. After that is all done, place them in a cooking pan and add 1 can of chicken stock enough to hit mid way to the middle of the pan.

This is how they look like before they hit the oven at 350 degree and ready to be cooked.

Place them in the oven for approx. 1 hr 20 minutes , and they will be ready to eat..


My favorite snack…

On a cold night and I am ready to see a good movie but what do i eat? I love chips and dip but I wanted something fun and warm in my belly. Then I decided to do my favorite snack, this included bread crumbs and an egg with a few dry ingredients for taste. it’s easy, fast and just fun to do and I would like to share it with you .

Let’s get started!

We will need 1 cup of bread crumbs and put in a med bowl and please add one large egg.

Mix in 1/4 of ground oregano, 1/4 of cilantro dry leaves, 1/4 of onion seasoning, pitch of black peeper.

Then add a cup of water and make it into a paste, not too wet and not to dry , don’t forget to put in the egg.

Then roll them into a ball, like if you doing meatballs – I like them in different shapes

After you finish rolling them into balls, pre heat the pan with 3 big cooking spoons of olive on medium heat and then once it gets hot, start to place them in the pan. Start to move them around while they cook. Then after they get the brown color,

then it should be good to go.. Remember this is just a simple snack with a side order of fresh tomatoes sauce to dip with Parmesan cheese on top.

Pork Chops Guisado…Come and Get it!!

Have you ever tasted Spanish Pork Chops Guisado? Just by saying those words my mouth has watered about a thousand times over. This dish is one of my husband’s favorite comfort foods as well as mine, therefore, I would like to share with my followers and hope it becomes theirs as well. I am a big fan of Goya products and have you noticed I always use Sazon and Goya Adobo in all my dishes? Because it gives it delicious Spanish twist.

Tools you will need for this recipe: 1 Medium sized pot, 2 Mixing bowls, 1 fork to mix your paste, 1 large wooden spoon.

First we are going to make the paste and you can season 6 to 8 Medium cut pork chops with this recipe.

The ingredient you will need are –

1/2 Tsp Black Pepper

1 Tsp dry Granulated Garlic

1 ½ package of Goya Sazon

1/2 Tsp cumin power

2 Tbsp dry Parsley      

2 Tbsp dry Oregano Leaves

1 Tbsp Adobo Goya

2 Tbsp Basil

2 Tbsp dry Cilantro

Place all dry ingredients into a bowel and add 2 Tbsp of olive oil, mix them together in a bowl with a fork to form a smooth paste. (If it is too sticky slowly add olive oil until it becomes a smooth paste) .

Next put your medium pot on the stove and gather these next ingredients-

2 cups of water  

1 medium size onion (Roughly chopped)

3 fresh large garlic (Roughly chopped)

½ cup of green peppers (Roughly chopped)

½ cup of red peppers (Roughly chopped)

½ cup of yellow peppers (Roughly chopped)

½ cup of orange peppers (Roughly chopped)

1 small can of tomato paste (You can us any type of tomato paste)

Let’s Get Cooking

Next put the pork chops into a clean mixing bowl, then add season paste 2 tbsp at a time mixing well before adding more paste to the pork chops. Make sure that the pork chops are seasoned thoroughly. Don’t be afraid to get your hands dirty….

Once these steps are completed, pre-heat the pot with 3 tbsp of olive oil on low heat, then placed the medium onion and fresh garlic to simmer for 20 seconds and stir (make sure not don’t burn the onion and garlic).
Then start to put in the pork chops one at a time.

Now mix the pork chops with the simmered onions and garlic together in the pot.

Then add the all the peppers, one can of tomato paste, add two cups of water and mix in well. Let it cook for an 1hr and 30 min on low flame with the a cover on the pot. If you have it on medium flame it will burn. Check it from time to time, it should start to form into a thick sauce, when it does stir the mixture slowly to avoid breaking the pork chops into pieces. Please note that this dish takes time and it’s worth at the end. While that is cooking, you can make rice or salad to compliment this meal. I prefer mine with rice.

Here is the finish product, it’s juicy, soft and ready to eat.

Breakfast, the best part of the day!!

Today I would like to share my favorite egg recipe: Scrambled eggs with sweet orange and yellow peppers, with a nice ripe avocado on top. It’s simple, fast and it really makes my morning!. All you need is:

Two Eggs

1/4 tsp of Sazon Goya

1/4 tsp of Goya Adobo

1/4 tsp of McCormick Onion Power

A pinch of black pepper  

Then get some sweet orange and yellow peppers and cut them up in what ever size you like. I prefer mine to be a mix cut.

Then I place the sweet peppers with a 1 tbl of butter on low heat. I sauté the peppers for about a minute, I like my peppers with a little crunch to them.

While the peppers are simmering in the pan, crack your eggs into a small bowl and mix in all of your dry ingredients.

*For fluffier eggs you can also add a tablespoon of milk.

Now, pour your eggs into the pan and continue to stir the eggs with your spatula for 20 seconds. When the eggs are starting to congeal turn off the stove, the eggs will continue to cook in the hot pan and you don’t want to over cook or possibly burn them.

When the eggs are done, cut a ripe avocado in half and slice them as you desire, place it right on top of the eggs and sprinkle your pinch of black pepper and serve.

Hey Guys, Let’s Make Some Bacon Chicken!!!

I love to cook , the first time that I started to cook was at the age of 11 years old. Cooking is relaxing for me and I really enjoy making people happy with my cooking. Therefore I wanted to share my Wrap Bacon Chicken with all of the world, this is my families favorite dinner, especially on Sunday afternoons. So grab your apron and let’s start cooking.

Now the Ingredients and steps are as follows.

  1. 1 Tbl of Dry Cilantro leaves
  2. 1 Tbl of Paprika
  3. 1/2 tsp of ground dry oregano
  4. 1/2 tsp of garlic salt
  5. a pitch of pepper
  6. 1 package of Goya Sazon –
  7. Put all the dry ingredients in a small bowl and mix until they are well incorporated.
  8. Next Step is to pre-heat the oven at 250 and once the chicken is places in the oven move it 350 degrees while you preparing the chicken. ( You can always start to preheat the oven at 350, if you’d like 🙂 )
  9. Take the pieces chicken and clean the chicken under running water.
  10. Take the chicken skin off ( if you want to keep them on you can) .
  11. place them in a pan and spread them out
  12. Make sure you punch wholes in the chicken.

13. Then rub the ingredients on the pieces of chicken really well

14. Then take the bacon and start wrapping the chicken individually – it doesn’t have to be perfect as long they are covered. Use what ever bacon you like.

15. Then just spread a little dry Cilantro leaves on the chicken.

16. Put 1/4 of a cup of water in the pan so chicken will not dry while cooking.

17. Then place the pan in the oven for 25 -35 minutes.

18. After the time is up, check to see if it’s cook just the way you like and enjoy.

Who said that Sex is dead after Marriage?

Being in a marriage is a journey you can take with the love of your life, everything is so fresh and new. Waking up with a smile on your face, receiving unconditional hugs and kisses are the norm.  Sex is fantastic and sometimes leaves you speechless even after the honeymoon stage. However, just like the seasons, sex in marriage fluctuates it becomes less frequent, then it only happens once every four months or longer.  The problem is that life takes over and it can be as simple as working new shift, having kids, living with the in-laws, and not being the same weight before one got married. Not having sex in marriage can also leave a gap for a spouse to cheat which can lead to a dark path. Nevertheless, there are some solutions to get that sex back into your marriage. By rethink of new ways to bring the spark you once had and remembering why we married that person. Just by taking a moment to go through the piles of issues that is preventing us from having great sex it’s worth the effort. Being married doesn’t have to be sexless; we just need that little push to get back on track again. 

Here are some simple steps that might work for you.  

  • On your spare time cook a nice dinner, your partner will see it as an invitation. 
  • Take a bath with each other and lather each other in love.
  • Give each other an intimate massage with some warm oil.
  • If you have kids, find a baby sitter and go out on a date.  
  • Have a romantic dinner.
  • Leave love notes in their pocket or purse, telling them how much you need them, and what you will do to them during sex. 
  • Grab their butt when they are washing dishes or if they bend over, a little foreplay will not hurt anyone. 
  • Hug them and say sweet or nasty things in their ear. 
  • Rent a hotel and Role Play. 
  • Call them at their job and tell them you miss and need them. 
  • Send sexy texts. 

Sex is great and we should always find time to enjoy it.

How To Get Rid Of Clutter.

In this day and age, we all have clutter, it could be just by simply stacking up mail on the table to overstuffing our closets, no matter how we look at it is still clutter. Now to get rid of the items is the most challenging aspect of the process. Some individuals feel an attachment that could stem from a memory or an event that happened in their lives, and if it’s thrown way they lose a piece of themselves. I was that type of person who held on to items that meant a lot to me, for example, my son’s old paintings when he was just six years old. I kept them in a container, it was not a lot but enough to fill the whole thing up and I also kept some old sweaters and a few pairs of jeans that I wore years ago. I felt that if I threw it away I was throwing out my life memories. Then I realized that is it not true and I needed to accept that I am not less of a person just because I wanted to get organized and relieved myself of clutter. So, I set some time aside and I started to clean and like magic, I felt great, focused and had clarity. Getting rid of clutter not only gave me the space I needed, but it gave me a better perspective. My mother once said that a clear mind is when your home is clutter free and she is right. Below are the steps that I took to get rid of my clutter and was able to move forward without feeling guilty.

Here are my steps:

1- Take the day off if you want to declutter.

2- Listen to great music, whatever makes you move.

3- Hold the item in your hand.

4- Ask yourself how long has it been in your house.

5- If it’s more then 6 months and if you have not used it then throw it out or give it charity.

6- Don’t overthink it, and don’t feel bad about throwing it away, material items don’t have feelings.

7- Give yourself a pat on the back for being clutter-free and enjoy your space.

A Good Day!

A good day is when you appreciate the time that is spent with family and friends, not only on holidays.  I feel that since many of us have busy lives, we should take time out not only for us but for our closest friends and family.  In my experience, the hardest part for me as a mother, wife, and grandmother is finding the time. I know I text them every day and send updates about my life on social media but it’s not the same. Therefore I decided that this year will be different. I want to start having Sunday dinners, where I can cook my family’s favorite meal, which is rice mixed with peas and roasted pork, which I am sure they would love. So, I would love to hear your ideas, what will you do to bring your close and dearest together on Sunday afternoons?
